Agar agar
Gelling and natural thickener that comes from red algae and is widely used in the kitchen. It is the main vegetarian and natural alternative to animal gelatin or fish tail. For its use it must be mixed with a liquid (water, juice, milk, broth or cream) and cooked to dissolve.
